100 Wedding Tips - part 3

Your guests

65. Start compiling a guest list ten to twelve months before your wedding. Don’t feel pressured to invite everyone you know – it’s your close friends and family who’ll make the day enjoyable. Aleit’s rule is that if they don’t know the name of your dog, don’t invite them.

66. If the number of your guests exceeds the venue’s capacity, first send invitations to an A list of guests. When negative RSVPs come back, refer to your B list.

67. Think carefully about you seating arrangement. Who knows who? Would rectangular, long or square tables accommodate the guest list better? Does anyone need special access?

68. Worried about family politics? The guests seated at the main table don’t have to be immediate family. Have separate tables for the Bride and Groom’s parents and their friends.

69. Give parents peace of mind and keep kids happy with babysitters, a playroom and a comfortable place to rest. Chefs or caterers often create children’s menus for a reasonable price.




Transport & Accommodation

70. Your transport to the venue should reflect the look of the wedding. Would an old fashioned horse and carriage fit the bill, or rather a racy convertible?

71. Ensure that there’ll be sufficient parking for your guests and consider hiring a car guard for the evening.

72. Shuttle transport for your guests gives them the freedom to enjoy the festivities with the assurance of safe transport.

74. Get dressed near to the ceremony venue to prevent any creasing on the way there. An upmarket accommodation with lots of natural light is also the ideal shoot location for bridal portraits.

  Ladine & Thys




Thys’s sister made the introduction while on a fishing holiday in Henties Bay, Namibia. ” Thys always says that he took the easy route - hooking up with one of his sister's friends.” smiles Ladine. 
 
Further down the line Thys took the initiative and informed Ladine that they would be enjoying a ‘braai’ with neighbours on top of a rather picturesque hill on a local farm. This hill can only be accessed through 4x4 vehicles and offers views of Cape Town Harbour, Table Mountain, False bay and all the 'platteland' towns; Malmesbury, Riebeek Kasteel – through to Stellenbosch and right across to the Franschhoek mountains. “When we reached the top Thys got off the quad bike and asked for my hand in marriage... simple as that. I said yes of course!” Ladine grins. Thereafter they enjoyed a lovely picnic lunch which included sushi, strawberries and champagne – all arranged by the neighbours who were meant to be attending this so called ‘braai!
 
 As the wedding day rolled around, the anticipation mounted! Ladine says with an animated smile; “It was the most exciting day of my life! Everything was perfect... from the carefully planned details to the amazing weather and even the full moon which graced the skies. It was such a happy day and I had so much fun – I’d gladly do it over again, a million times if I could, without changing a thing!” The couple cherished having all their family and friends around them - not to mention three grandmothers!   
 
Ladine and Thys were married at the church in Philadelphia. Ladine recalls so many mixed emotions as she walked down the aisle! “My heart was racing, I was so excited yet I was not sure if I wanted to laugh, cry, dance or sing...so I tried to walk as slowly as possible to just savour the moment - knowing that I will never do this again. But that tactic went out the window when I saw Thys waiting for me. At that moment I wanted to get to him as quickly as possible!” 
 
Guests then made their way to Diemersdal Wine Estate on the outskirts of Durbanville for the reception. To this day we feel so proud of the vision we created and the amazement on everyone’s faces!
 
Guests were welcomed to a “festive picnic” theme. Groups of informal seating had been created on the lawns using a contrasting mixture of modern and old-fashioned furniture. Flip flops were available in cane baskets so that the ladies could “slip into something more comfortable”. Both games of boule and croquet were available and accented the festive picnic theme.  A Polaroid station encouraged guest interaction as they took photos of each other amongst the vineyards. Shade was provided by magnificently draped installations covering the seating areas. A further ‘wow’ factor was introduced by having the locally acclaimed group, Sterling EQ entertaining guests while they enjoyed a selection of carefully chosen beverages and mouth watering canapés - some items being served hot off the coals.




Guests were then ushered into a 18m x 50m bedouin tent that was placed on the laws overlooking the Diemersdal vineyards. Tables were arranged in different styles and sizes. The flowers and décor was arranged by OKASIE who  managed to exceed expectations with their playful use of alternating heights and variety of chairs. The look was completed in contrast with cut crystal glassware and king pattern silver cutlery. A local DJ played till the early hours of the morning.
   
“Our experience with The Aleit group was not just a professional one. They were also friends who operated with our best interest at heart. I really felt important, someone with a voice that was responded to - not just another bride on a conveyor belt. Planning the wedding with the Aleit team was such fun – I really miss the meetings!”
 
Thys arranged the honeymoon keeping Ladine out of the loop all together. In fact the bride was completely unaware of where she was headed until she received her boarding pass in Johannesburg. Only then did she realise they were off to the Seychelles. “What an amazing place with such a rich marine life! We went snorkling, fishing, island hopping and sailing. We both love the sea and often go fishing and diving along the West Coast which is bitterly cold so the tropical waters were a real treat! We stayed at a lodge on a private beach, La Reserve, where we had cocktails and dinner on a Jetty over the ocean every evening. And luckily for us – after a week in Seychelles our honeymoon was not yet over! On our return, we were whisked off to enjoy a skiing holiday in Zell Am Zee, Austria accompanying my parents for my father's birthday.” 
 
Ladine offers these thoughts to futures brides; “During the time that I was planning the wedding, I was also finishing my degree in Audiology at UCT which was very time consuming - having to do a research project and all that entails. I therefore engaged a personal trainer twice a week so that I didn't have to worry about getting in shape as well. If you are really stressed, have a lot of work to get through and have to worry about getting in shape for your big day - I would say a personal trainer is a must........just like a wedding coordinator! Furthermore, having an engagement shoot was awesome. You get to know the photographer and more importantly he/she gets to know you. And do not hesitate to engage one of the top photographer / videographers! Watching the photos and video evokes all of the emotions that you experienced during the day- keeping those memories and experiences alive forever!”

Topic: My wedding is two months away and I don’t have an idea where to start. Please, where do I start?

Congratulations on your engagement!

Don’s stress, this should be an exciting time for you and your fiancé.

Although you do not have much time left for planning, it is definitely possible to organise a wedding in a short time.

First of all, do you have a venue?   If you don’t have a venue yet, I suppose your invitations have not been sent.  After booking and confirming a venue for the ceremony and reception, send the invitations out as soon as possible.  Decide on a budget and stick by it.  Order your wedding dress and accessories and book a reliable hair and make-up artist.  The photographer  is next.  This is an important part, as the photographs will be all you have left after the memories fade away!  So, make sure you love his/her work and book the best you can afford.

Meet with your venue to discuss details of the day (menu, waitrons, wine and beverages). 

Be an organised bride, create a “wedding” file with photographs, magazine clippings and ideas you would love for your big day.  This file must also include quotes and contact details of all your service providers.  Keep track of what services have been paid for (deposits and outstanding balances).  Here are a list with the essentials:

1.     Venue for the ceremony and reception

2.     Stationery designer (invitations, ceremony programme, name place cards, menu, table seating, thank you cards etc)

3.     Wedding dress and hair and Make-up artist

4.     Groom’s suit

5.     Photographer/Videographer

6.     Accommodation and transport for the bridal couple and for guests

7.     Menu compilation and selection of suitable wines, specifying brands, cultivars and vintages.

8.     Minister

9.     Florist

10.  Hiring Company (if linen, cutlery, crockery, tables and chairs need to be hired in extra) 

List what needs to be done and tick off the list as you go along and ask for help.  Involve your husband-to-be in the planning and assign  your best friend/maid of honor areas to take charge of.

Preparing a comprehensive timing schedule/programme for the day of the wedding.  Meet with and provide guidance to the master of ceremonies prior to the wedding.

Don’t leave things for the last minute.  You need to rest the day before the wedding.  A stressed bride is not a pretty site.

Opulence

We might be in the midst of a global recession, but that’s not stopping the rise of opulence, one of the hottest wedding trends this season. It’s all about indulging in lavish luxuries and escaping to a world where credit crunches and deficits are nothing but a vague memory. The trend takes many forms – some couples want to do everything on a colossal scale, with huge guest lists, five course meals and several forms of entertainment, while others prefer to make every detail count (think real crystal glassware, designer wedding favours and only authentic French champagne). The message is loud and clear: more is more!



Less is more

Clear glass containers with single stems, has been a hot favourite for most urban and edgy brides, for the past four seasons. Besides the fantastic impact, that this look and feel portrays, it may also be cost effective, for most bridal couples.  Please be warned though, to pull off simplicity, perfection is indeed required.  Linen should we well steamed, napkins should be crisp white and oversized and textures should be rich and elegant. 



Colour is bold

In this look, the dinner tables could features a luxurious silver, grey or off white cloths with dramatic accents of colour! Good quality silverware and Hampton crystal completes the style to precision.  Additional contrasting touches should be implemented by way of alternative cutlery placement, hand written chalk board menus and even a mad hatter wedding cake! (We are sure Johnny Depp would approve!) Overall this concept is also quite budget friendly, yet rich looking!

As the weather starts to get warmer, our thoughts turn to balmy summer evenings, and celebrations under the stars… Here at Fresh Living we’ve whipped up a deliciously light, simple and scrumptious menu to celebrate your big day.

Start off with a plate of sophisticated ostrich carpaccio with parsley and capers, follow it with a perfectly cooked pan-friend veal limone, and end the meal – and the best day of your life – with a wonderfully fresh pomegranate panna cotta. Simply superb!



Starter

Ostrich carpaccio with parsley and capers

Serves 4

Ingredients:
500 grams ostrich fillet, trimmed of sinew
1 pinch salt and milled pepper
1 glug PnP olive oil
2 tsp dijon mustard
60 ml white balsamic vinegar
60 ml capers
8 small pickled onions, sliced
125 ml flat-leaf parsley
1 piece parmesan cheese, to serve

Method:
• Season ostrich with salt and pepper. Wrap tightly in clingfilm and freeze for 1 hour or until slightly frozen (this makes slicing easier).
• Remove clingfilm and use a very sharp knife to slice thinly
• Arrange slices on a flat platter or individual plates
• Mix a little oil with the mustard and vinegar
• Top carpaccio with capers, onion and parsley
• Drizzle with dressing and shave or grate over parmesan

Another idea
• For ostrich tartare, chop meat into 2mm cubes and mix with remaining
ingredients. Top with a raw egg yolk.




Main Course

Pan-fried veal limone

Serves 4

Ingredients:
10 slices veal schnitzels, or beef or pork schnitzel
125 ml PnP organic flour, for coating
2 tbsp PnP butter
1 tbsp PnP olive oil
2 lemons, juiced

60 ml chicken stock
2 tbsp flat-leaf parsley
1 pinch salt and milled pepper

Method:
• Coat meat with flour then shake gently to remove excess. NB: flour meat just before cooking.
• Heat butter and oil in a large non-stick pan. When bubbling, add meat and fry in batches, turning once or twice.
• Add lemon juice, stock and parsley and cook for about 3-4 minutes
• Season to taste and serve with Pick n Pay Traditional Range buttery mash or fresh tagliatelle and steamed green beans

Cook's tips
• Serve with brown basmati rice instead of mash to lower the glycemic index (GI)
• Place veal on a roll with fresh salad and sliced tomato for a fabulous burger alternative





Dessert

Pomegranate panna cotta

Serves 4

Ingredients:
Main Ingredients
1.5 tbsp gelatine
3 tbsp water
810 ml PnP cream
125 grams PnP castor sugar
1 medium vanilla pod, split, seeds scraped out
Jelly
1.5 tsp gelatine
2 tbsp water
180 ml pomegranate juice, plus extra to serve
125 ml pomegranate seeds, plus extra to serve
3 tbsp PnP sugar

Method:
• Mix gelatine powder and water and stand for 3 minutes
• Heat cream, sugar and vanilla bean and seeds in a saucepan
• Add gelatine mixture and cook, stirring, to dissolve gelatine
• Remove vanilla bean pod and allow to cool

Jelly
• Soak gelatine powder in water. Heat pomegranate juice in a pan, add gelatine and cook, stirring, for 1 minute.
•Divide jelly among moulds, sprinkle pomegranate seeds over each and allow to set in fridge for about 20 minutes
•Pour over cream mixture and chill until set, about 2 hoursServe drizzled with a little pomegranate juice and a few seeds

More good ideas
• Add 2 Tbsp (30ml) desiccated coconut to cream mixture
• Use passion fruit juice and pulp in place of pomegranate juice and seeds

Grootvlei Guest Farm is situated 6km from the charming fishing village of Lambert’s Bay with its moderate climate all year round. It is within walking distance of the Atlantic Ocean and its long, uninterrupted white beaches.

During the flower season from July to early October each year, the area is covered with a tapestry of brightly coloured wild-flowers. Conservation of the dune vegetation has seen the return of small game and you may spot a duikertjie or other buck on an early morning walk.

Birdwatchers will have a field day spotting a large variety of birds, or if you are lucky, you may see Heaviside’s dolphins, whales and seals frolicking in the blue waters a short distance from the beach.
Grootvlei Guest Farm boats 2 accommodation establishments. Grootvlei Guest House B & B (TGC 4 stars), a spacious double storey homestead offers 7 stylishly decorated double bedrooms. All rooms treat guests to luxurious bed linen, an en suite bathroom with shower and pampering toiletries, satellite TV and a coffee/tea station. The various lounge areas and outside patios ensure a restful retreat after a busy day exploring the West Coast.



The Grootvlei On the Dunes B & B (TGC 3 stars), situated amidst the dunes at the edge of the Atlantic Ocean, comprises four individual en suite units, each one uniquely furnished and decorated with meticulous attention to detail. The Grand Suite comes with fireplace, luxurious king size bed and a unique open roofed, shell shaped bath/shower where one can refresh while gazing at the stars and listening to the crashing waves. The freestanding communal lounge area offers uninterrupted views of the beach, a sheltered veranda and a cosy fireplace.

Grootvlei GuestFarm has 2 event venues. “Innituin” venue is set amongst Grootvlei's spreading gardens and multiple water features. Borrowing from the traditional West Coast latjieshuis (reed house) look, the venue's outer walls are clad with a reed finish.

An impressive oval shaped, double volume roof complete with intricate, exposed wooden beams, adds to the drama of the structure. The venue lends itself perfectly to large special occasions such as weddings, conferences and the performing arts. The size of the venue allows for seating up to 250 guests, cinema style seating for up to 600 concert goers and schoolroom seating for approximately 120 conference attendees.



The “Oppiduin” venue, an intimate space fronting the crashing waves on the beach below, captures the rugged, unpretentious soul of the West Coast. Constructed with a unique shell clad exterior and natural flooring of shells collected from the surrounding beaches, the oval shaped building with lattice roofing lends itself to informal entertaining and smaller sized special occasions - whether it be a memorable wedding reception, the authentic closure of a team building experience or hosting the performing arts in a unique setting.
