Most people work to live. We count ourselves very lucky to be making our living while doing stuff we’re passionate about. We cook because we love food, and we go to parties because we love people. Our kitchen is a continually busy riot of flavour and colour where we often laugh so much our stomachs ache.

Since starting in Andrea Foulkes’ home kitchen during the course of 2002 we have cooked for some of South Africa’s best-known corporates, as well as many of Cape Town’s leading lights. From large events, such as the Nederburg Auction, Loerie Awards, Durban July or J&B Met to catered home dinners or fairy tale weddings, we apply the same passion for food and attention to detail.

Our repertoire draws on European, Asian and New World influences. We bring a contemporary slant to barbecue/braai, which we regard as one of our specialities. While we often use duck, beef, lamb, chicken, as well as various fish and seafood, a disproportionate number of the dishes we produce are vegetarian.

This prestigious accolade affirms Fancourt’s dedication to responsible Environmental Business Practice, and its commitment to improving performance in terms of a ‘green’ approach in all key spheres of the business operation.
 
Driven by Tana Scott (Fancourt Safety, Health, Environment and Quality manager) Fancourt has adopted a ‘green’ approach to all aspects of the business operation. It has established an Environmental Management System to improve its performance, with recycling as the first and key focus area implemented to lessen its footprint. 
 
Other focus areas include management of invasive alien vegetation species; waste, water and electricity management, as well as investigating the installation of a biogas system, which would process Fancourt’s sewage, food waste and organic waste, while producing energy and reusable water.
 
Numerous other joint initiatives and many smaller actions are also employed by Fancourt on an ongoing basis, such as sorting and recycling of all waste, and using biodegradable cleaning products and micro-organisms in the kitchen fat traps. The outcome of this has been remarkable with an impressive 80% recycling figure for all waste generated, and Fancourt’s energy consumption having been reduced by approximately 10% over the last two years.

Arnold and I met when we where teenagers at a beach party in Onrus. Both our families have been going there for holidays (and they still do). We used to sit on the rocks and watch the sunset. Years later we met again as grownups. We were both single and on our first date I knew I wanted to marry Arnold. He proposed to me on the same rocks in Onrus while we were watching the sunset, just like the old days!

We wanted to keep the wedding personal, real and down to earth. I am a wedding photographer and I have been to so many weddings, that the last thing I wanted was a traditional wedding. We love camping and being out in nature, so we wanted the wedding to be outside, but also in a natural setting. We went to look at Beloftebos and immediately knew that was our venue. We both liked the idea of a festive old world carnival with lots of fun and playful elements, oh and with a Karoo farmyard feel to top it off! We thought about the things we loved most and incorporated it into our wedding. We had stalls with ginger beer, candyfloss, popcorn and an ice cream truck. There were lots of picnic blankets and places in the forest for our guests to sit and relax, and even play with games like “kettie skiet” (catapult) – the guys made a stand with some old cooldrink cans that could be shot, this made for excellent fun and great photographs. The dancefloor was outdoors, under the stars with lots of bonfires and the whole forest was lit up by fairylights. Our guests all dressed in “festive” clothes which also made the wedding much more relaxed.

What made our wedding special was that everything was personal and reflected our personalities. We did not do anything by the book but rather tried to be as creative as possible. We made the menus, table plans, signposts, games, table numbers, etc. My mother, aunt and her friend Maurice did all the flowers. I ordered the ostrich feathers from Oudtshoorn for a bit of extra drama. My dress was very special and I could not have asked for better designers than Theresa and Stephen from Gelieft. I told them that I wanted something amazing, different and dramatic and I didn’t want to look like a bride. They made my dream dress and I felt like a princess in it. It was two dresses in one. For the ceremony I had a long dress and then I took the skirt off for the reception and had a whole different look.

My advice? THINK OUTSIDE THE BOX! There are no rules when it comes to weddings. Do the things you love and have fun. Be dressed and ready an hour before the wedding so you don’t have to rush and get stressed. Enjoy the wedding as if you are a guest and dance, eat, party and be merry! Don’t feel obligated to speak to every single person for hours because the day goes too fast. If you can, step away with your partner for a few minutes and just take in what is happening around you.

Make a slideshow with all the ideas for different sections like the ceremony , the flowers , the decor , dresses etc. and then go find them! Look around at second-hand shops, discount shops, your own things at home, etc.

Simonsig Estate, pioneers of South Africa’s first Methodé Cap Classique 40 years ago – the iconic Kaapse Vonkel – celebrate romance with the latest vintage of their blushing debutant, the alluring Kaapse Vonkel Brut Rosé 2008. 

Captivating with a bright, rosy pink hue, the newly released Kaapse Vonkel Brut Rosé 2008 is a vivacious benchmark for Cap Classiques where Pinotage dominates the blend. This latest vintage is composed of 63% of this uniquely South African grape varietal, rounded off with a classic kiss of Pinot noir (29%) and Pinot Meunier (8%). 

The result is a full-flavoured, refreshingly dry sparkling rosé with a fragrant berry fruitiness, finesse and silky smoothness on the palate.

Rose petal and strawberry aromas dominate the nose, revealing its red grape origins, while a fine, creamy mousse enlivens the floral bouquet in the mouth. A mouth-filling roundness on the palate shows ample fresh fruit intensity and body, which is perfectly balanced by a subtle acid structure that leads to a crisp, dry finish.

Simonsig releases new Kaapse Vonkel vintage 

Simonsig Estate has just released the 2008 vintage of the award-winning Méthode Cap Classique, Kaapse Vonkel Brut – a delicate and refreshing sparkler with great dimension and poise.

In addition to being the country’s first sparkling wine made according to the French tradition of secondary bottle fermentation, Kaapse Vonkel also became the first Cap Classique to use all three of the traditional grape varieties used in Champagne when Pinot Meunier was introduced in 1997. 

The Simonsig Kaapse Vonkel 2008 has a luminous pale straw hue and shows lively floral aromas with hints of sun-ripened Golden Delicious and citrus freshness on the nose. A classic biscuit character follows through to a nostalgic encounter of freshly baked bread on a rich, full palate. Think lemon creams or your favourite apple pie with almond pastry.

The mousse is extremely fine and enhances the roasted almond nuttiness in the mouth whilst respecting the fruit flavours from the grapes that linger well to a refreshing finish. Alluring with the finest, racy bubbles, this Cap Classique has all the attributes to gain in richness and complexity for four to six years.

New vintage Simonsig Cuvée Royale adds sparkle to the season  

Simonsig Estate, who gave South Africa its first bottle fermented sparkling wine back in 1971, is adding sheer ‘so-fizz-tication’ to festive celebrations with the release of the latest vintage of its flagship Cap Classique, the poised Cuvée Royale 2005. 

Made from only the finest and most delicate Chardonnay (96%) and Pinot noir (4%) cuvées, this French inspired Cuvée Royale spent five years on the lees to develop its complexity, finesse and fine mousse. Simosig Cuvée Royale is only made in exceptional vintages with previous releases stemming from 2004, 2003 and 1999, 1996 and 1992, a clear indication of the selective manner in which this prestigious Cap Classique is crafted.

Upfront roasted almonds, buttery brioche and ripe yellow apple aromas dominate the nose while the unmistakably citrus flavours of the Chardonnay show gorgeous finesse and a classic mineral freshness on the finish. The result is a sophisticated Brut Cap Classique which revives the palate with exquisite balance between the primary fruit and the complexity of slow evolution.

David Collins, the London based interior design genius behind a host of the most spoken-about and photographed hotels, bars and restaurants around the globe, was responsible for creating an enthralling and breathtaking ambience that delights the senses, while relaxing the spirit.
 
The brilliance of the restaurant’s design is its beauty and sophistication without being overwhelming.
 
The tone is set by a striking Kentridge portrait that takes pride of place above the fireplace. Generally known for his monotones and muted shades, this rare work, of the 80’s, boasts a swathe of bright tangerine. RECIPE OF THE MONTH



It is winter time and the time has come for snuggling up infront of the fire! Now there is nothing like warm, decadent plate of food on a cold winters night. We have compiled a scrumpcious three course meal that is guaranteed to keep you hot this winter.


 
Wedding Food


Starter:
 
Roast Butternut, billeting and rice salad
Serves 4
 
Ingredients
330 ml PnP brown rice
500 grams butternuts, chopped
3 tbsp PnP olive oil
1 pinch salt and milled pepper
125 ml biltong, finely sliced
3 tbsp onion roasted seeds
1 cup cucumber, cut into chunks or shaved into ribbons
2 tbsp parsley, or mint, chopped
 
Method
Preheat oven to 180°C
Cook brown rice according to packet instructions
Drain and set aside
Toss butternut, olive oil and seasoning into a roasting pan
Roast until cooked through and slightly charred
Stir through rice, butternut, biltong, onion roasted seeds, cucumber and herbs.
Serve tossed with your favourite vinaigrette or honey mustard dressing.

 
Wedding Main


Main:
 
Oxtail stew with peaches and port
Perfect for those chilly winter evenings. Take care though, this dish is extremely high in fat!
Serves: 4
 
Ingredients
2 onions, sliced
3 carrots, peeled and diced
2 celery stalks, peeled and diced
1 clove of garlic, finely chopped
1 tbsp garlic avocado oil
2 tbsp cake flour
1 pinch salt and milled pepper, to taste
1.7 kilograms oxtail, ready cut
300 ml boiling water
150 ml port
100 ml beef stock
4 tbsp red grape vinegar
4 tbsp PnP brown sugar
2 PnP bay leaves
4 large potatoes, peeled and quartered
20 dried peaches, roughly chopped
1 can tomato, chopped
1 tbsp rosemary, chopped
3 tbsp parsley, chopped
 
Method
Sauté the onions, carrots, celery and garlic in a little oil until soft
Season the cake flour with salt and pepper and coat the oxtail pieces in the mix
Brown the meat in heated oil.  Add the boiling water, port and beef stock and mix well.
Add the vinegar, sugar and bay leaves and simmer for 3 hours until the meat is nearly tender (add more boiling water if necessary).
Add the potatoes, peaches and tinned tomatoes. Simmer until the potatoes are done and the meat is tender.
Season with more salt and pepper if necessary and add the chopped rosemary and parsley. Mix in well.
Take off the heat and serve with yellow rice

 
Desserts

Dessert:
 
Vanilla and caramel apple crumble
Serves: 4
 
Ingredients
Crumble
1 cup PnP organic flour
60 grams PnP butter
60 grams PnP sugar
Filling
80 ml PnP butter
125 ml PnP brown sugar
6 cooking apples, peeled, cored and quartered
2 tsp vanilla essence
 
Method
Preheat oven to 180°C
Grease a 20 x 20cm ovenproof dish or 4-6 smaller ones
Rub crumble ingredients together to resemble rough breadcrumbs
Heat butter and sugar in a pan and stir until all sugar has dissolved. Boil for 3-4 minutes. 
Add apples and vanilla and toss to coat
Spoon into baking dish, sprinkle over crumble mixture and bake for about 25 minutes or until golden
Serve with custard, ice cream or cream

My second wedding... his first - My first wedding was not at all glamorous. I got married without a veil and our reception was breakfast/brunch/finger foods. It was still a beautiful occasion with the theme, food etc. and it cost us about R20 000. I'm getting married again - but it's his first wedding. I do not want a big wedding, as I have gone through that already... but I know his family would demand it. What do you suggest I wear this time round? We are also very low on a budget, so I cannot use fancy chapels/lodges/venues etc. I don't want to get married at someone's house either... What type of wedding will suit us?

Before deciding on the perfect dress for your wedding, you first have to establish what type of wedding you are going to have:  inside, outside, traditional, funky, elegant and romantic or maybe a cheerful wedding on the beach?  Also, are you a more mature bride or a young (blushing) bride? 
 
Needless to say, these factors will influence your dress choice. In general then, let me answer by saying: yes, you can still wear white. For a bride’s second wedding, a “red carpet” dress is extremely elegant and stylish.  Choose a white or off white colour that suits your skin tone.  Remember, there are so many shades of white and choosing the one that suits you is very important.  It can make or break your overall look!  Above all: this is your day – so whether this is your first, second or tenth wedding, wear the dress that makes you feel like the "belle" of the ball. 
 
Our recommendation for you special day: How about booking out a beautiful restaurant. By doing this you will save a fortune on décor costs and also on waitrons and hiring. Most restaurants will have everything available already. The trick is to find just the right place.
 

Herewith a few hints when choosing a restaurant as a wedding venue:
 
 
•           Will their kitchen be able to cope with your amount of guests?  Most restaurants are not used to sending out a large amount of plated food at the same time.
 
•           Of course the look of the restaurant is extremely important.  Are you looking for an urban modern wedding or a intimate relaxed wedding?
 
•           Are the waitrons any good?
 
•           Is there enough parking for all your guests at the restaurant?
 
•           Are they able to accommodate a dance floor and are there any noise restrictions?
 
•           Are they able to tailor make a menu according to your specifications?
 
•           Is there any venue hire applicable when booking out the whole restaurant?
 

We have coordinated many weddings in restaurants with huge success and it definitely is a wonderful option.  Especially if you want to save money and still have a glamorous affair.
